The Spyderco Wakiita Gyuto is the KnifeNews Readers’ Choice for Best New Kitchen Knife 2020! This capable Murray Carter creation captured the hearts of culinary cadets everywhere, capping off a category that also included the Benchmade 15500-1 Meatcrafter, James Brand Hells Canyon, Real Steel OHK Chef’s Knife, and TOPS Dicer 8 Chef.
No doubt about it: the knife community’s interest in kitchen cutlery is growing. In 2020, we saw lots of companies break into this segment of the market, or expand their existing culinary options. Such was the tack that Spyderco took with the Wakiita line, a more affordable sequel series to the Itamae collection, which debuted last year.
But even though it is more price-conscious than the Itamae model, the Wakiita Gyuto is not a budget knife; rather, Spyderco focused on finding that point between affordability and performance. This is something they’ve done for years with their folders and other fixed blades, and with the Gyuto – and other Wakiita models – they’ve done the same in the kitchen.
Lots of users prize versatility in their EDC knives; so why not apply the same philosophy to their kitchen cutlery? As the analogue to a Western chef’s knife, the Wakiita Gyuto pattern strives for that kind of universality. The clean, linear 10.08-inch blade can cut meat, dice vegetables, and even accomplish detail-oriented work with its low, acute tip.
The Wakiita variation means this Gyuto comes in CTS-BD1 steel, a real workhorse of a stainless that Spyderco has played a big role in popularizing. Some popular EDC steels don’t make a good fit for kitchen knives, but CTS-BD1 takes to the format with ease. In fact, its high corrosion resistance and responsiveness to sharpening mean that this is a knife even non-knife folks will be able to preserve and maintain. It would be an ideal first “real” kitchen knife for just about anybody.
